Did you know that PACC also has a Transition department? Our caring and qualified transition service specialists go above and beyond to help students aged 14-21 with disabilities take those next steps into adulthood by helping with life skills, job searching skills and offering them the support they need...BUT....We always make sure to take time out for a little fun! ❤️

Our awesome transition specialist April and her client Sam had a terrific time visiting the National Aviary this week!

More about Transition Services at PACC:

The two main concerns of the parents/caregivers of our clients have been the lack of opportunities for work and appropriate social activities to build friendships.

We provide solutions for those concerns.

By partnering with local schools and businesses, PACC connects individuals with disabilities to their communities and fosters independence through integration.

PA Connecting Communities provides a transition program for student’s ages 14 to 21 years of age and currently enrolled in high school.

We provide services with an emphasis on building life and work skills. Our goal is to ensure that our participants will receive appropriate transition services which align with their individual interests and abilities, while promoting community.

Our employment services are designed to work with students to assist them with developing employment skills and opportunities through (OVR) Office of Vocational.

Our Community Participation services provide students with opportunities to be involved in group activities in the community that focus on building social skills, independent living skills, and life.

Apple “nachos” are simply sliced apples topped with all kinds of goodies. (Kind of like nachos are chips topped with goodies).

You can top them with just about anything that sounds good. I like doing at least one thing that’s “drippy” (like peanut butter or chocolate) + a few other toppings for some crunch + interest.

Ingredients needed: (per person)

1 Apple
1 Tbsp. Peanut Butter (or your favorite nut/seed butter)
1 Tbsp. Chocolate Chips (mine are allergy-friendly) OR 1 Tbsp. Honey
1/4 tsp. coconut oil

TOPPING IDEAS:
shredded coconut
mini chocolate chips
chopped nuts
sunflower seeds
granola
Rainbow sprinkles
cinnamon or cinnamon-sugar
raisins, etc!

TO MAKE APPLE NACHOS:

1. Thinly slice apples + arrange on a plate

2. Drizzle with peanut butter, almond butter, honey or melted chocolate (or a mix!)

3. Sprinkle with toppings!

Ground Turkey Sweet Potato Skillet

Yields: 6 Servings Total Time: 30 minutes

Ingredients:

3 small or 2 large sweet potatoes, peeled and diced (about 3 cups)
1 pound ground turkey
1 yellow bell pepper
1 cup onion, diced
½ cup mozzarella, shredded
½ cup water
¼ cup cilantro, chopped
2 tablespoons olive oil
1.5 tablespoons ground cumin
1 tablespoon garlic, minced
1 teaspoon chili powder
½ teaspoon salt
¼ teaspoon pepper

INSTRUCTIONS

1. In a large skillet, heat olive oil over medium-high heat. Add garlic and cook for 1 minute and then add ground turkey. Use a wooden spoon to break apart meat and continue cooking approximately 8 minutes until browned.

2. Add cumin, chili powder, salt and pepper. Stir well to incorporate.

3. Add onion and bell pepper, and cook for 3-4 minutes. Add diced sweet potato and water. Stir and cover with a lid for approximately 6-8 minutes until the sweet potatoes soften. Add additional water during this process if needed to keep the meat from drying out.

4. Remove lid and add additional salt and pepper if needed. Top with shredded mozzarella and allow it to melt. Remove skillet from heat and garnish with fresh cilantro before serving.

No Big Ed class today- will resume on 3/12/21!
